Fish broth
Ingredients:
1 large onion, quartered
2 tablespoons butter or margarine
1/2 small head savoy cabbage
2 carrots, cut up
1 parsley root, cut up
3 quarts water
6 peppercorns
1 bay leaf
salt
2 pounds fish fillets
1 teaspoon lemon juice
1 teaspoon salt
1/2 teaspoon nutmeg

Directions:
1. Brown onion in butter in small skillet.
2. Meanwhile, simmer the vegetables in water with peppercorns, bay leaf, and salt to taste 15 minutes.
3. Add onion and fish to vegetables; simmer about 10 minutes, or until fish flakes easily.
4. Remove fish and vegetables.
5. Strain broth. Add lemon juice, salt, and nutmeg.
6. Boil broth rapidly 10 minutes. Strain again, if desired.
