Ingredients: 2 oz (50 g) lean boneless pork 1 tsp. soy sauce 4 eggs 3 1/2 fl oz (100 ml) high stock 1/4 tsp. salt, or to taste 1/4 tsp. MSG (optional) 3 tbsp vegetable oil 1 1/2 tsp. rice wine
Directions:1. Cut the pork into slivers. 2. Beat the eggs until foamy. Add the salt and MSG (optional) and mix well. 3. Heat the oil in a wok over medium heat until very hot, about 420 F (220 C), or the oil surface ripples. Add the pork slivers and stir-fry until cooked. Add the eggs and cook until solid. Add the rice wine, soy sauce and stock, stir-fry for 2 or 3 minutes. Remove and serve. |
