Turkey breast with broccoli
400 g turkey breast
100 g minced turkey meat
125 g mushrooms
200 g broccoli
1 egg
1 tbsp white flour
1 clove garlic
salt pepper
1 kg potato wedges
1 tbsp olive oil
salt and pepper
1 smal onion
1/2 tbsp olive oil
100 ml white wine
50 ml stock
100 curd or cream cheese
1 tsp corn flour
water cress

1. Chop the mushrooms finely, boil the broccoli and mash it. Mix the mushrooms, broccoli, egg and white flour with the minced turkey meat. Season with salt and pepper and add the crushed garlic.
2. Remove any bones from the turkey breast and place it flat on the table. Place the minced meat mix on top and roll together. Tie with cotton, brush with oil and put in a 200 C (390 F) oven for one hour.
3. Brush an oven proof dish with oil. Clean the potatoes and put in dish. Season with salt and pepper and drizzle with about a tablespoon of oil. Put into the oven with the turkey for 40 minutes.
Basil sauce: Chop the onion and saute until clear. Add white wine and stock and reduce for about 5 minutes. Mix the corn flour and cheese and add to sauce and simmer until thickened. Remove from heat and add herbs, salt and pepper to taste.
