Ingredients: 8 cups rye flour 4 tablespoons sugar 2 cups warm water 1 cup milk 1/2 stick margarine, melted 1 large yeast cake 2 eggs 1 tablespoon sal Directions:Mix yeast with 1 cup warm water and 1 tablespoon of sugar. Let foam. Mix 1 cup of milk and 1 cup of warm water. Mix flour, eggs, sugar, salt and melted margarine. Add yeast/water mixture and milk/water mixture. Knead until dough does not stick to bowl. Cover and keep in a warm place. Let rise until double in size, approximately 1 hour. Fold in from sides. Sprinkle with flour; punch down. Let rise again. Take from bowl and form into loaves. Coat with beaten egg and let rise until double in size. Bake at 350 F for 15 minutes, then lower heat to 325F and bake for 30 minutes longer. Remove from oven and coat with margarine or butter. |
