Ingredients: 1/4 cup Soy Sauce 2 slices ginger, minced 1/4 teaspoon five-spice powder 2 teaspoons star anise 1 teaspoon salt 3 quarts chicken stock 1/4 cup Chinese cooking wine 1 roasted duck carcass, including any leftover meat, skin, or giblets 2 green onions, chopped 3/4 teaspoon sugar
Directions:1. Chop duck into small pieces and place in a large pot with stock, soy sauce, wine, ginger, star anise, green onions, and salt. Bring to a boil, then simmer uncovered over low to moderate heat for 2 1/2 to 3 hours. 2. Strain stock, then return to pot. Add five-spice powder and sugar and simmer another 20 minutes. Chill and skim. Reheat to serve. |
