Bacon wrapped beef tenderloin with ommegang abbey double beer sauce
Ingredients:
beef tenderloin 1 each
bacon (as needed)
1 can beef stock
2 each carrots small, chopped
onion small, chopped 1 each
10 sprigs fresh thyme
2 oz. butter
8oz. Ommegang Abbey Ale
salt and pepper to taste

Directions:
1. Season beef loin with salt and pepper and wrap in bacon strips.
2. Roast in a oven at 450 degrees until bacon starts to brown, then lower oven to 350 degrees and finish until the middle section of the roast is 120 degrees, reserve and rest for 10-15 minutes.
3. Brown vegetables in the roasting pan, remove some of the oil and add beer to the pan releasing all of the meat particles from the bottom of the pan.
4. Add stock and thyme, simmer until 1 cup liquid remains, whisk in butter, away from stove, season with salt and pepper, serve beer sauce with the roast.
