Mesclun greens with walnut dressing
Ingredients:
1 tablespoon champagne vinegar, plus more as needed
1/2 cup walnut oil
1 teaspoon garlic, minced
1 teaspoon Dijon mustard
1/2 cup peanut oil
salt, if desired
1/2 teaspoon sugar
1 tablespoon shallots, finely chopped
juice of 1 lemon, or to taste
1 egg yolk


Directions:
1. Beat together egg yolk, mustard, vinegar, lemon juice, garlic, shallots, and sugar.
2. Beating rapidly with a wire whisk, slowly add walnut and peanut oils.
3. Add salt and pepper to taste.
4. Toss with mesclun greens and serve immediately. Garnish with cherry tomatoes.
