Ingredients: 4 green chiles 2 tablespoons ginger, minced 1/2 teaspoon turmeric 4 Basmati Rice, cooked, for accompaniment 1 tablespoon Pure Ghee Sea salt water, as needed 3 pounds large chicken pieces 1 juice from lime 1 teaspoon cumin seeds
Directions:1. Using a mortar and pestle or small food processor, combine the ginger, garlic, peppercorns, green chiles, cumin, and turmeric to a smooth paste, adding very little water to make a thick paste. Add salt and lime juice. 2. Add chicken, coat evenly, and marinate for about 2 hours. 3. Heat the ghee in a non-stick pan and add the dry red chiles. Fry for 10 seconds. Remove chiles and add the marinated chicken pieces. 4. Fry on low heat until the chicken is done about 35 minutes. Add water as necessary during the cooking, serve with basmati rice. |
