Ingredients: 50 g fig jam 500 g plain flour 5 eggs, (the yolk separated from the egg white) 250 g butter 250 g sugar 1 cup (200 ml) milk 50 g walnuts 1 pack (15 g) baking powder 1 pack vanilla sugar 40 ml rum or cognac Directions:1. Beat together the sugar and the eggs till white. Add the egg yolks one by one then add slowly the flour, mixed with the baking powder and the milk. Beat till smooth. Fold in the egg whites beaten till stiff together with the fig jam, the walnuts, the rum and the vanilla sugar. 2. Pour into greased and floured cake pan. Bake it for 10 minutes on 200 Celsius and further 35 minutes on 180 Celsius, or until a tooth pick, inserted in the middle, comes out clean. Leave it in the pan till it is cooled, then upturn onto a wire rack. Dust with powder sugar before serving. |
