Duchesse potatoes
Ingredients:
1.5 kg potatoes
200 g butter
1 or 2 eggs
3 or 4 egg yolks
salt, pepper
nutmeg
Time: 50 min

Directions:
1. Peel and wash the potatoes. Cut and cook quickly in salted water. Drain immediately to prevent them from soaking in the water.
2. Put on a baking sheet for a few minutes to dry off. Puree.
3. Cook this puree on the stove to dry it out. Combine with the butter, and season. Away from the heat, combine with the eggs, mixing well. The mixture is ready for use.
