Vinegared soft roe and cucumber (shirako to kyuri no sunomono)
Ingredients:
soft roe "shirako"
cucumber
rice vinegar
salt
vinegar dressing
1 tablespoon rice vinegar
1 tablespoon soup stock
a pinch of sugar
a pinch of salt
a little of soy sauce

Directions:
1. Wash shirako by salty water and take aawy black string. Cut into a bite pieces with be careful not tear.
2. Sprinkle with a pinch of salt over cucumber and roll over on cutting-board to rrmove pricks. Wash lightly and slice thinly crosswise. Sprinkle with a pinch of salt and let stand for 10 minutes. When cucumber becomes limp, soak in rice vinegar water and squeeze out water.
3. Serve shirako and cucumber and pour over the vinegar dressing.
