RECIPES FROM CHIEF | Recipe: Cheddar apple tarts with apricot-mint glaze
Ingredients: Cheddar Pastry:
2 cups all-purpose flour
1/2 cup shredded sharp or extra-sharp white Cheddar cheese
1 1/2 tablespoons sugar
1/4 teaspoon salt
10 tablespoons (1 1/4 sticks) cold, unsalted butter, cut into small chunks
6-8 tablespoons ice water
Cheddar Apple Filling:
1/2 cup brown sugar
1/2 cup chopped pecans or walnuts
6 ounces sharp or extra sharp white Cheddar cheese, cut into thin slices
6 medium Granny Smith, Jonagold or Jonathan apples (about 2 1/4 pounds) peeled, cored, cut into 1/3-inch slices
1 tablespoon chopped fresh mint, optional
3 tablespoons apricot preserves, warmed white Cheddar cheese wedges for topping

Slow Cooker Vegetable Minestrone | Ingredients:4 cups vegetable or chicken broth
4 cups tomato juice
1 tablespoon dried basil leaves
1 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
2 medium carrots, sliced (1 cup)
2 medium celery stalks, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 cup sliced fresh mushrooms (3 ounces)
2 garlic cloves, finely chopped
1 can (28 ounces) diced tomatoes, undrained
1 1/2 cups uncooked rotini pasta (4 1/2 ounces)
Shredded Parmesan cheese, if desired

Korean Beef | Ingredients:2 tablespoons mirin
1/2 tablespoon sambal oleck
1/4 cup soy sauce
1/4 cup sesame seeds, toasted
1/4 teaspoon gochu-karu (red pepper flakes)

1 tablespoon fresh ginger, peeled and minced
4 cloves garlic, finely minced
4 scallions, finely chopped
3 tablespoons firmly packed brown sugar

1 tsp. ea. cumin, paprika, basil, oregano, thyme and rosemary pinch nutmeg
2 Tbsp. olive oil
2 Tbsp. fresh cilantro, chopped
juice of two limes
1 loaf baguette bread, split in half
4- 1 oz. slices brie cheese

sliced avocado
grilled red onion
grilled jalapenos

Chicken Satay | Ingredients:6 boneless, skinless chicken breast halves
1 onion, quartered
1/2 cup creamy peanut butter
1/4 cup teriyaki sauce
1/4 cup corn oil
1 tablespoon ground coriander seed
ground black pepper, to taste
1/4 cup lemon juice
