Ingredients: For each Skewer: Skewer onto a 4-5" Sprig of Fresh Rosemary: 2 cantaloupe melon balls 1 bay scallop, sauteed 1 strip prosciutto ham, 3/4" x 6" 1 strip mozzarella, 3/4" x 6" Sprinkle Scallop with: 1/2 t. flat-leaf parsley, minced
Directions:Layer the strips of prosciutto and mozzarella, and pierce the top of the strip with the rosemary sprig. Then spear the cantaloupe balls and scallop onto the sprig, weaving the strip in and out between them, forming an "S". If you're using scallops (this is optional), sprinkle with the minced parsley. Use any fruit or semi-soft cheese you want. |
