Ingredients: 2 lbs. spiny lobster, whole cooked 2 Tbsp. minced fresh cilantro Lettuce leaves Dressing: 1 Tbsp. light oil 1 clove garlic, pressed or minced 2 Tbsp. cup rice vinegar 1/2 Tbsp. light soy sauce 1/2 Tbsp. toasted sesame seeds 1 Tbsp. green onions or chives, minced 1/4 tsp. fresh ginger, minced 1/8 tsp. pepper Juice of 1 lime Directions:Remove lobster meat from shell and cut into chunks. Blend dressing ingredients together, then toss with lobster meat and chill. Serve on lettuce leaves; garnish with cilantro. |
