Ingredients: 1 1/2 cups cooked long-grain brown rice 1 cup cooked black beans 1/2 medium red bell pepper cut in thin strips 1/2 medium yellow bell pepper cut in thin strips 4 green onions thinly slice, including green part 1/2 cup minced cilantro 3 tablespoons olive oil 2 tablespoons fresh lime juice 1 fresh red Thai chile, finely minced Directions:1. In large bowl, combine the rice, beans, bell peppers, onions and cilantro. 2. In a small bowl, whisk the olive oil into the lime juice. Add the Thai chile. Pour over rice and beans mixture and toss. 3. Cover and refrigerate until chilled. Serve on bed of lettuce, decorated with slices of papaya and wedges of lime. |
