Ingredients: 1/2 tsp olive oil 1 c bell peppers -- chopped 1 c onions -- chopped 2 cloves garlic -- minced 30 ozs dark red kidney beans -- drained and washed 28 ozs crushed tomatoes 1 c water 3 c turkey light meat, skinless -- cooked and cubed 1 tbsp chili powder 1 tsp coriander 1 tsp red pepper flakes 1 tsp salt 1 c fat-free cheddar cheese -- grated Directions:In a skillet heat oil over low heat. Add bell peppers, onions, and garlic. Cook until tender. Then, add beans, tomatoes, water, turkey, chili powder, coriander, red pepper flakes, and salt. Simmer 25 minutes |
