Ingredients: 15 ounces cooked white beans, such as navy or great northern, rinsed and drained 1 ripe haas avocado, scooped out into chunks 3/4 cup bottled salsa; mild or hot 1 tablespoon lime juice, or more salt, to taste 3 tablespoons finely chopped fresh coriander, for garnish Total time: 5 min
Directions:Place beans, avocado, salsa and 1 tablespoon lime juice in a food processor. Pulse just enough to create a coarse puree. Add extra lime juice and salt to taste. Transfer to a small serving bowl and garnish with coriander. |
