Ingredients: 400 g plain flour, sifted 1 teaspoon dry yeast 1/4 teaspoon sugar 250 ml warm water 1/4 cup olives, roughly chopped 1/4 cup red onion, sliced and fried 40 ml olive oil (plus extra for brushing) 2 potatoes, boiled and thinly sliced
Directions:1. Combine the yeast, flour, oil, sugar and warm water, knead for 15 minutes by hand or with the hook attachment of a mixer. 2. Place the dough into a lightly greased bowl, cover and leave to prove for an hour in a warm place. 3. Add the olives and onions to the dough and knead for a further 10 minutes then place it into an oiled baking tray, brush with oil and prove for another 20 minutes. 4. Cover the top of the foccacia with the potato slices, brush with olive oil and bake in a 200 C oven for 15-20 minutes. |
