Ingredients: 2 lbs small red potatoes, cooked, pared, sliced 3 tbsp white wine vinegar 1/3 cup olive oil 1/2 tsp salt 1/4 tsp pepper 1 1/2 lbs Natural Casing Smoked Sausage, grilled, sliced in 1/2-inch pieces 1/3 cups sliced green onions, including tops 2 tbsp capers Lettuce leaves Directions:Toss cooled potatoes gently with vinegar, oil, salt and pepper. Add sausage to potatoes. Sprinkle with green onions and capers. Serve on lettuce leaves. |
