Ingredients: 3 pounds eye of round roast 1 cup avocado 3 ounces cream cheese 2 ounces caviar 1 bunch flat-leaf parsley Directions:Place eye of round onto a rack in a roasting pan roast 325 F degrees for 60 minutes, or to desired doneness remove from oven wrap in plastic and chill thoroughly cut slices to a thickness of 1/4-inch. Combine mashed avocados and cream cheese-mix well spread onto beef slices garnish each with red caviar and a parsley leaf. Serve slightly chilled or at room temperature. |
