Ingredients: 4 large potatoes, microwaved until cooked 100 g fresh mushrooms, sliced thinly 1 tomato, sliced 2 teaspoons dried herbs green capsicum, chopped 2 tablespoons plain low-fat yoghurt Time: 30 min Directions:1. Cut the potatoes in half and scoop out the flesh. 2. Combine potato flesh, mushrooms, herbs, capsicum and yoghurt in a bowl and mix well. 3. Place back into the potato skins, top with a slice of tomato. 4. Reheat in the microwave for 6 minutes. |
