3 teaspoons garlic, chopped
1 can bamboo shoots (rinsed and drained)
3 tablespoons vegetable oil
2 cups Jasmine rice, cooked for accompaniment
3 tablespoons Fish sauce
1/4 cup fresh basil, chopped
2 shallots, chopped
1 pound shrimp, scallops or your choice of seafood
1 pinch brown sugar
1. Heat oil in a wok or skillet. Saute garlic, basil, lemongrass, and shallots for 2 minutes.
2. Reduce heat and add seafood, bamboo shoots, fish sauce, and brown sugar. Stir-fry for 5-10 minutes or until the seafood is tender but not overcooked.
3. Serve with rice.
