Ingredients: 5-6 medium potatoes, peeled and thinly sliced 1 tablespoon fresh thyme or rosemary 3 spring onions, thinly sliced 4 small zucchini, cut into thin sticks 1 red capsicum, seeded and cut into strips Olive oil 1 teaspoon crushed garlic Salt and freshly ground black pepper Time: 55 min Directions:1. Place half the potato slices in an ovenproof dish. 2. Sprinkle with thyme, garlic, salt, pepper and spring onions. 3. Add zucchini and red capsicum, season and drizzle with a little olive oil. 4. Top with the remaining potatoes, brush with oil and sprinkle with salt and pepper. 5. Cover with foil and bake for 40 - 45 minutes at 200 C, removing the foil for the last 10 minutes. |
