Ingredients: 1 cup grated carrot 2 cups chedder (or similar) cheese 1/2 cup finely chopped onion 1 cup crushed water crackers (I prefer Arnotts SAO's) 1/2 cup milk 3 eggs 200gm tin of tuna OR salmon OR 3 bacon rashes salt & cracked pepper (or other flavouring if desired eg. Tobasco, curry powder) Directions:The above amounts are all approximates. Correct consistency is achieved when mixture holds together similar to dough (ie. not sloppy or dry - but clings together). Combine all ingredients in a large bowl. Mix thoroughly with hands. When correct consistency is achieved simply place into pie dish and pat down gently into shape of dish. Cook on 400 F (approx 200 C) for 40 minutes. The amounts of ingredients used will determine the correct cooking time. Keep in mind that this is a pie that will rise very little when baking (so opening your oven to check on progress will make little difference to the end result - simply a longer cooking time)! Serve with side salad & potato of your choice as a main course OR delicious as an entree (or snack - a favourite to take to school)! |
