Ingredients: 1/2 cup butter, at room temperature 1/2 cup vegetable oil 1 3/4 cup sugar 2 large eggs 2 teaspoon vanilla extract 1/2 cup milk mixed with 1/4 teaspoon white vinegar 2 1/2 cups flour 1/4 cup cocoa powder 1 teaspoon baking soda 1/4 teaspoon ground cloves 1/2 teaspoon cinnamon 1/2 teaspoon salt 2 cups finely grated zucchini 1 cup chocolate chips 1/2 cup chopped nuts (optional)
Directions:Preheat oven to 325 degrees F. Grease and flour a 9x13-inch baking pan. Set aside. Mix the butter, oil and sugar until well blended and creamy. Add the eggs, vanilla extract and milk/vinegar mixture. Blend well. In a separate bowl, mix together flour, cocoa powder, baking soda, cloves, cinnamon and salt. Add to the butter mixture and stir by hand to combine. Add grated zucchini and stir well. Spoon the batter evenly into the pan. Sprinkle the chocolate chips and nuts on top and bake for about 45 minutes, until a toothpick inserted in the center comes out clean |
